Cut from the top sirloin, this little steak is moderately tender, juicy and has a great beefy flavor. It’s one of the leanest cuts from the Wagyu, but still has enough of the trademark marbling to impart that buttery flavor.
Cooking Tips: The Baseball is best pan seared or grilled. Minimal treatment is required but it benefits from salt and pepper, or a marinade if you prefer. Cook over medium-high heat for two to four minutes per side to achieve medium rare to medium temperature. It is important to let this steak rest for three to five minutes after cooking to let the juices redistribute throughout the steak.
